Borðhald is a traveling restaurant project I have been operating since 2014. The policy of Borðhald is to bring people together, use locally sourced food in an innovative way and pair it with low intervention beverages. The method I follow in creating new dishes is to let the flavor of the beverage Inspire the final outcome of the dish, in that way I hope to create the perfect pairing between food and drink.
